Recipe #9

Fifteen chocolate brownies, Jamie Oliver (Cook with Jamie)

Another one chosen as a crowdpleaser for the arrival of the three eldest. I’ve not made that many brownies in my lifetime, but this one definitely ranks up there – almost certainly my most successful one, and this is particularly pleasing given I was able to deploy my sous-chef (Megan, 8) to do most of the work.

One small gripe.. “As all ovens are different, you’ll need to keep an eye on them – and remember that chocolate always firms up at room temperature, so if you take them out of the oven when they’re a bit gooey, they’ll be perfect……  place in the oven for around 25 minutes… should be slightly springy on the outside but still gooey in the middle”

This seems a whole load of approximations, roughlys etc etc… My oven is pretty reliable, and yet I still cooked these for slightly over 30 minutes before I had what I thought he was talking about above.. I suppose when one makes a lot of brownies, the right consistency is obvious, but I make so many different things that I don’t have a lot of space left in the memory banks for exact consistencies of something I last made 2 years ago!

Anyway, this aside, they were extremely good. Recipe claimed to make 8-10, I cut 12 from it and each portion was still seriously filling. Thumbs up from the children too!
